Carioca is one of favorite snack during my childhood days, every afternoon, a vendor carrying this delicious snack would walk in our street and shout “Karioka!” Growing up, Karioka vendors are almost non-existent, this is the reason why I started researching for its recipe.

Carioka Balls (or Karioka in Filipino) is a balls shaped donut like snack made out from rice flour and dipped on sweet syrup. Street vendor’s version are skewered (normally 4 balls in a skewer), Karioka is sweet, chewy and filling.

Here’s my take on how to make Carioca Balls at home.

Carioca Balls cooking procedure

  1. Combine flour, shredded coconut, and coconut milk in a bowl, mix it well until a dough is formed.
  2. Form the balls by scooping 1 1/2 tablespoon of the mixture and rolling it using the palm of your hand. Place all the formed balls in a platter.
  3. Deep fry the Carioca balls in medium heat for 5 to7 minutes or until the color turns light to medium brown. Do it in batches to maintain the oil temperature.
  4. Remove the cooked balls in a plate lined with paper towel. Set aside.
  5. Prepare the coating by heating a saucepan, then pour in the coconut milk. Once the coconut milk starts to boil, add the brown sugar and stir continuously until mixture reaches a thick consistency.
  6. Dip the fried balls into the coating then skewer.

Chef’s Note

  1. Sprinkle sesame seeds after coating the balls with syrup for extra texture
